Cucumber Salad

Ingredients:
3 large cucumbers, peeled and thinly sliced
1 tablespoon salt
2 tablespoons apple cider vinegar
1 cup sour cream
1/2 teaspoon chopped fresh chives
1/2 teaspoon freshly ground black pepper

1) Place sliced cucumbers in a medium bowl.
2) Sprinkle with salt and let stand for 1 hour.
3) Drain cucumbers on paper towels, pressing to remove excess liquid.
4) Return cucumbers to bowl, and stir in remaininig ingredients.
5) Chill at least 1 hour before serving.
